Vegetable and cheese roulade

Ready Roll puff pastry
Vegetable mix
Red pepper
Mushrooms
Cheddar Cheese
Salt and pepper
Egg

  1. Whisk the egg
  2. Use one sheet of the puff pastry and wash with the egg
  3. Cook the vegetables, diced pepper and mushrooms in a little butter
  4. Cool and place the mixture in the centre of the pastry sheet leaving a 2cm strip around all edges
  5. Sprinkle with the grated cheese
  6. Season with the salt and pepper
  7. Egg wash the outside place on baking sheet and bake for 20 minutesĀ at 180 C
